What Sterno Is and How It Works
Sterno fuel is a metal can filled with jellied or gel alcohol — typically a denatured blend of methanol, ethanol, or diethylene glycol — that burns cleanly when lit with a match or lighter. The can sits in the base of a chafer frame, directly beneath a water pan filled with approximately one inch of hot water. That water heats the food pan above it through indirect conduction, which is the same principle as a bain-marie — just in a portable, field-ready format.
The indirect heat method is intentional. Direct flame contact would scorch food and create uneven hot spots. The water pan acts as a thermal buffer, distributing consistent heat across the entire food pan.
Burn Times and Event Matching
Standard Sterno chafing fuel cans range from 45 minutes to 6+ hours of burn time. Catering teams select burn time based on service duration: 2-hour cans are typical for cocktail receptions and short lunch buffets, while 4- to 6-hour cans are used for extended formal dinners and all-day conference service.
Most full-size chafer frames hold two cans positioned at either end of the water pan frame to distribute heat evenly. Half-size chafers typically use one can.
